A Taste of Scandinavia

No ethnic celebration would be complete without delicious traditional foods. You'll be treated to a variety of Scandinavian foods, including lefse, varme polse and sotsuppe, in addition to mouthwatering pastries like kringla, krumkakke, sandbakkels and more! Of course, many American favorites, some with a Scandinavian twist, will be available as well.
Food demonstrations and tasting opportunities are held throughout the Fest, and you'll be able to discuss recipes and techniques with some of the areas finest cooks.
To give you a sample of some of the treats you may encounter during Nordic Fest, below are three favorite recipes. Enjoy!
Lefse

2 C. riced potatoes, packed
1 T. butter
1 T. cream
1 scant cup flour
1/2 T. sugar
1 1/2 T. salt
Boil potatoes in salted water, drain, mash, then rice. Add butter and the cream. Mix and cool.
Just before rolling, add flour, sugar, and salt. Mix by hand or with a hand mixer.
Roll thin using a cloth covered pastry board and lefse rolling pin. Bake on hot grill, turning once. Will make about 8 lefse.
Kranskake (Norwegian Wedding Cake)

1 lb blanched almonds
1 lb powdered sugar
3 egg whites, beaten
Grind almonds in blender (fine). Mix with powdered sugar. Beat egg whites and fold them into dough. Roll out like pencil and put into Kranskake ring pans.
Bake 20 minutes at 300 degrees. Cool slightly before removing.
Frosting:1 egg white
1 tsp vinegar
Powdered sugar (quantity to the consistency you want)
Use the frosting to hold the rings together. Use the remaining frosting to drizzle or frost the completed cake.
Rømmegrøt

2 sticks butter
1 cup flour
5 cups milk
3/4 cup sugar
1/4 t. salt
Melt butter in heavy kettle. Add flour. Cook and stir until well blended. Add milk. Cook until thick. Add sugar and salt. To serve sprinkle with sugar and cinnamon.
